Easy Blueberry Crisp Cake
Ingredients
Crust
- 2 cups oats
- 3/4 cup pecans
- 3/4 cup almonds
- 1 tsp baking powder
- 1/2 cup solid coconut oil
- 3 tbsp maple syrup
Filling
- 3 1/2 cups blueberries
- 2 tbsp cornstarch
- 3 tbsp coconut sugar
Preparation
Preheat the oven to 180 degrees and grease a round baking pan.
Place all crust ingredients in a food processor and mix until a sticky dough forms.
Spread 3/4 of the dough over the pan and set aside.
Meanwhile, mix the filling ingredients in a bowl.
Spread the filling over the crust and bake for 30 minutes.
Serve with a scoop of vegan ice cream.
