Easy Blueberry Crisp Cake

Ingredients

Crust

  • 2 cups oats
  • 3/4 cup pecans
  • 3/4 cup almonds
  • 1 tsp baking powder
  • 1/2 cup solid coconut oil
  • 3 tbsp maple syrup

Filling

  • 3 1/2 cups blueberries
  • 2 tbsp cornstarch
  • 3 tbsp coconut sugar

Preparation

  1. Preheat the oven to 180 degrees and grease a round baking pan.

  2. Place all crust ingredients in a food processor and mix until a sticky dough forms.

  3. Spread 3/4 of the dough over the pan and set aside.

  4. Meanwhile, mix the filling ingredients in a bowl.

  5. Spread the filling over the crust and bake for 30 minutes.

  6. Serve with a scoop of vegan ice cream.
