Blueberry, Almond Butter & Banana Baked Oats

Ingredients

  • 50g (1/2 cup) oats (gf if required)
  • 1/2 mashed banana
  • Handful blueberries
  • 2 tbsp any yogurt (soya used here)
  • 3 tbsp boiling water
  • 1 tbsp maple syrup
  • 1/2 tsp baking powder (gf if required)
  • 1 tsp nut butter for topping

Preparation

  1. Preheat oven to 180°C (350°F) or gas mark 4.

  2. Add boiling water to oats in a bowl, stir, and let it sit for 5 minutes to thicken.

  3. Combine all other ingredients in the bowl and mix well.

  4. Pour the mixture into a shallow oven-proof dish lined with baking parchment/paper and bake for 30 minutes.

  5. Serve warm with a drizzle of maple syrup and a dollop of nut butter on top.
