Blueberry, Almond Butter & Banana Baked Oats
Ingredients
- 50g (1/2 cup) oats (gf if required)
- 1/2 mashed banana
- Handful blueberries
- 2 tbsp any yogurt (soya used here)
- 3 tbsp boiling water
- 1 tbsp maple syrup
- 1/2 tsp baking powder (gf if required)
- 1 tsp nut butter for topping
Preparation
Preheat oven to 180°C (350°F) or gas mark 4.
Add boiling water to oats in a bowl, stir, and let it sit for 5 minutes to thicken.
Combine all other ingredients in the bowl and mix well.
Pour the mixture into a shallow oven-proof dish lined with baking parchment/paper and bake for 30 minutes.
Serve warm with a drizzle of maple syrup and a dollop of nut butter on top.
