Vegan Gluten-Free Apple Pie Biscoff Cheesecake

Ingredients

Crust

  • 200 g oats
  • 200 g almond flour
  • 45 g almond flakes
  • a pinch of salt
  • 100 g maple syrup
  • 5 tablespoons coconut oil

Filling and toppings

  • 1200 g coconut yogurt (3 x 400 g)
  • 6 g agar agar
  • 85 g maple syrup
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 1 apple
  • 15 g raisins
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • optional: Biscoff cookies

Preparation

  1. Preheat the oven to 170 degrees Celsius.

  2. Mix all ingredients for the crust in a food processor and spread it in the pie pan.

  3. Bake the crust for 12 minutes.

  4. Meanwhile, make the filling by mixing all ingredients except the agar agar in a bowl.

  5. Heat the agar agar in a small saucepan with some water.

  6. Add the agar agar to the filling mixture.

  7. Spread the filling over the crust and refrigerate until it sets.

  8. Mix the apple, maple syrup, cinnamon, and optional Biscoff cookies in a bowl and spread this over the cheesecake.

  9. Serve and enjoy.
