Hidden Veggies No-Knead No-Yeast Bread
Ingredients
- 1 cup grated carrot (about 1 medium carrot)
- 1 cup grated zucchini (about 1 medium zucchini)
- 1 cup plain yogurt (dairy-free if desired)
- 2 cups all-purpose flour (or a mix of all-purpose and whole wheat flour)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1 teaspoon dried herbs (such as oregano or thyme) or 1/4 cup chopped fresh herbs (optional)
Preparation
Grate carrot and zucchini, then place the grated zucchini on a paper towel and gently press to remove moisture.
In a large mixing bowl, combine yogurt, grated carrot, and grated zucchini, then add flour, baking powder, and herbs and stir well.
Over the mixing bowl, combine baking soda and apple cider vinegar, let it fizz, and stir until the ingredients are just combined.
Preheat oven to 350°F (175°C), line a loaf pan with parchment paper or lightly grease it, transfer the batter to the pan, smooth the top with a spatula, sprinkle with seeds if desired, and bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
