Healthy Vegan Oatmeal Banana Cookies

Ingredients

  • 2 cups old fashioned oats
  • 2 mashed up bananas
  • 1/2 cup vegan chocolate chips
  • 1/4 cup unsweetened coconut flakes (chopped up so they are small)
  • 1 tsp vanilla
  • 1 tsp cinnamon

Optional additions

  • Maple syrup or other sweetener to taste, if needed

Preparation

  1. Mix all ingredients in a bowl.

  2. Form the mixture into about 7 cookies; they may seem wet but will firm up.

  3. Place them on a cookie sheet.

  4. Bake at 375 degrees for 10-12 minutes.

  5. Let cool for a bit before transferring.
