Sugar-Free Maple Banana Bread

Ingredients

  • 3 ripe bananas
  • 1/2 cup maple syrup
  • 1/2 cup Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups white flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon

Preparation

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.

  2. Mash the ripe bananas in a bowl.

  3. Add maple syrup, Greek yogurt, eggs, and vanilla extract to the mashed bananas and mix until combined.

  4. In a separate bowl, whisk together flour, baking powder, baking soda, and cinnamon.

  5. Combine the wet and dry mixtures until just blended, avoiding overmixing.

  6. Pour the batter into the prepared loaf pan.

  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
