Cookies and Cream Banana Bread

Ingredients

  • 2 small ripe bananas
  • 1/2 cup greek yogurt or 1/4 cup milk
  • 2 eggs
  • 1/2 cup granulated sugar or coconut sugar
  • 1/2 cup all-purpose flour or gluten-free all-purpose flour
  • 1 cup almond flour
  • 1 tsp baking powder
  • 6 cookies or similar

Preparation

  1. Preheat oven to 350F and grease or line a loaf pan.

  2. In a large bowl, whisk together the wet ingredients, then stir in the dry ingredients and add in the crumbled cookies.

  3. Pour the batter into the loaf pan, top with extra cookies, and bake for 38-40 minutes.

  4. For the glaze, stir together 3 tablespoons powdered sugar with 1 teaspoon almond milk.
