Cinnamon Walnut Banana Bread

Ingredients

  • 3 ripe bananas, mashed (around 280 g)
  • 1 egg
  • 150 g brown sugar or other sweetener
  • 20 g coconut, shredded
  • 150 g oil or melted butter if your choice
  • 280 g wholegrain flour
  • 10 g baking powder
  • 10 g cinnamon
  • chopped walnuts

Preparation

  1. In a large bowl, beat the egg with the sugar.

  2. Add the oil or butter to the egg mixture and combine it well.

  3. Add the mashed bananas into the bowl and mix well.

  4. Next, add the pre-sieved flour, coconut, cinnamon and the baking powder, and mix it thoroughly.

  5. Then mix in the walnuts and sprinkle some more on top.

  6. Preheat your oven to 180°C.

  7. Line your banana bread pan with some parchment paper.

  8. Pour the mixture in and spread it evenly across the pan.

  9. Bake for 50 minutes to 1 hour, until it's fully cooked.

  10. Bring it out of the oven and set it on a rack to cool down.
