Cinnamon Walnut Banana Bread

Ingredients

  • 3 ripe bananas, mashed (around 280g)
  • 1 egg
  • 150g brown sugar or other sweetener
  • 20g shredded coconut
  • 150g oil or melted butter of your choice
  • 280g wholegrain flour
  • 10g baking powder
  • 10g cinnamon
  • Chopped walnuts

Preparation

  1. In a large bowl, beat the egg with the sugar.

  2. Add the oil/butter to the egg mixture and combine well.

  3. Add the mashed bananas to the bowl and mix well.

  4. Add the pre-sieved flour, shredded coconut, cinnamon, and baking powder, and mix thoroughly.

  5. Mix in the chopped walnuts and sprinkle some more on top.

  6. Preheat your oven to 180°C.

  7. Line your banana bread pan with parchment paper.

  8. Pour the mixture into the pan and spread it evenly.

  9. Bake for 50 minutes to 1 hour, or until fully cooked.

  10. Remove from the oven and let it cool down on a rack.

  11. Enjoy!
