Cinnamon Walnut Banana Bread
Ingredients
- 3 ripe bananas, mashed (around 280g)
- 1 egg
- 150g brown sugar or other sweetener
- 20g shredded coconut
- 150g oil or melted butter of your choice
- 280g wholegrain flour
- 10g baking powder
- 10g cinnamon
- Chopped walnuts
Preparation
In a large bowl, beat the egg with the sugar.
Add the oil/butter to the egg mixture and combine well.
Add the mashed bananas to the bowl and mix well.
Add the pre-sieved flour, shredded coconut, cinnamon, and baking powder, and mix thoroughly.
Mix in the chopped walnuts and sprinkle some more on top.
Preheat your oven to 180°C.
Line your banana bread pan with parchment paper.
Pour the mixture into the pan and spread it evenly.
Bake for 50 minutes to 1 hour, or until fully cooked.
Remove from the oven and let it cool down on a rack.
