Cinnamon Roll Baked Oatmeal

Ingredients

  • 1/3 cup rolled oats
  • 1/4 tsp baking powder
  • 1 tbsp granulated sugar (can use coconut sugar)
  • 1/4 cup milk (can use almond milk)
  • 1 egg

Swirl Topping

  • 2 tsp granulated sugar (can use coconut sugar)
  • 1/2 tsp cinnamon
  • 1/2 tsp milk (can use almond milk)

Glaze

  • 2 tsp powdered sugar
  • 1/4 tsp water

Preparation

  1. Preheat oven to 350F and grease a small oven-safe ramekin.

  2. In a high-powered blender, blend together the oats, baking powder, granulated sugar, milk, and egg.

  3. Pour the mixture into the ramekin, add a swirl of the topping mixture on top, and bake for 23 minutes.

  4. In a small bowl, mix together the powdered sugar and water to make the glaze. Once the oatmeal is done baking, drizzle the glaze on top and serve.
