Cinnamon Roll Baked Oats

Ingredients

  • 1 cup Quaker old fashioned oats
  • 1 cup Chobani oat milk
  • 1 teaspoon baking powder
  • 1 grated zucchini
  • 1 egg
  • splash of vanilla
  • 1 tablespoon cinnamon
  • 2 tablespoons brown sugar

Yogurt icing

  • Greek yogurt
  • confectioners' sugar (to taste)
  • cinnamon
  • sunbutter

Preparation

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Grease a pan, such as a loaf pan.

  3. Blend everything together and pour half into the pan.

  4. Sprinkle cinnamon and brown sugar in the middle along with some raw oats.

  5. Add the rest of the mixture and more cinnamon and sugar.

  6. Bake for 20 minutes or until a cake tester comes out clean.

  7. Top with yogurt icing made by mixing Greek yogurt with confectioners' sugar, and add cinnamon and sunbutter.

  8. Enjoy!
