Blood Orange Baked Oats

Ingredients

  • 1 flax egg
  • 1 tsp baking powder
  • 1 heaping tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 2 tbsp olive oil
  • 1/2 cup chopped walnuts
  • 2 cups gf oats
  • 1/4 cup maple syrup
  • 1 3/4 cup cashew milk
  • 1 blood orange sliced
  • Yogurt or kefir

Preparation

  1. Preheat oven to 375.

  2. Grease a 8/8 or desired baking dish.

  3. In large measuring cup prepare flax egg and set aside.

  4. Add baking powder, spices, salt, vanilla and coconut oil and stir together.

  5. Add in walnuts, oats, maple syrup and cashew milk.

  6. Pour oat mixture into pan and place sliced orange on top.

  7. Place in preheated oven for 40-45 minutes.

Serving suggestions

  1. Optionally serve with yogurt or kefir.
