Chocolate Blueberry Baked Oatmeal

Ingredients

  • 2 cups old-fashioned oats
  • 1.5 cups oat milk (or any plant-based milk)
  • 2 teaspoons baking powder
  • 2 eggs
  • 2 tablespoons cinnamon
  • 1/4 cup milk chocolate chips
  • 1 cup fresh blueberries (can use frozen)
  • Handful of craisins
  • 2 tablespoons honey or maple syrup

Preparation

  1. Preheat the oven to 400 degrees Fahrenheit.

  2. Grease a pan, such as an 8x8 inch pan.

  3. Beat the egg.

  4. Add the milk, oats, and all dry ingredients.

  5. Stir in the chocolate chips, craisins, and blueberries.

  6. Bake for 30-40 minutes or until a cake tester comes out clean.

  7. Top with nonfat Greek yogurt, honey, sunbutter, more cinnamon, and fresh or heated berries.

Notes

  1. This recipe serves 4-5 people and can be made ahead for breakfast and snacks, lasting up to 5 days.
