Chocolate Blueberry Baked Oatmeal
Ingredients
- 2 cups old-fashioned oats
- 1.5 cups oat milk (or any plant-based milk)
- 2 teaspoons baking powder
- 2 eggs
- 2 tablespoons cinnamon
- 1/4 cup milk chocolate chips
- 1 cup fresh blueberries (can use frozen)
- Handful of craisins
- 2 tablespoons honey or maple syrup
Preparation
Preheat the oven to 400 degrees Fahrenheit.
Grease a pan, such as an 8x8 inch pan.
Beat the egg.
Add the milk, oats, and all dry ingredients.
Stir in the chocolate chips, craisins, and blueberries.
Bake for 30-40 minutes or until a cake tester comes out clean.
Top with nonfat Greek yogurt, honey, sunbutter, more cinnamon, and fresh or heated berries.
Notes
This recipe serves 4-5 people and can be made ahead for breakfast and snacks, lasting up to 5 days.
