Chocolate Blueberry Baked Oatmeal Breakfast Dish

Ingredients

  • 2 cups old fashioned oats
  • 1 cup milk (sub any plant based milk)
  • 1/2 cup Greek yogurt
  • 2 teaspoons baking powder
  • 2 eggs
  • 2 tablespoons cinnamon
  • 1/4 cup milk chocolate chips
  • 1 cup fresh blueberries (can use frozen)
  • 1/4 cup craisins
  • 2 tablespoons honey or maple syrup

Preparation

  1. Preheat oven to 400 degrees.

  2. Grease a pan (use an 8x8 inch pan).

  3. Beat the egg.

  4. Add milk, oats, and all dry ingredients.

  5. Stir in chocolate chips, craisins, and blueberries.

  6. Bake for 30-40 minutes or until a cake tester comes out clean.

  7. Top with nonfat Greek yogurt, honey, sunbutter, more cinnamon, and fresh or heated up berries.
