Hearty Blueberry Baked Oatmeal Breakfast Dish

Ingredients

  • 2 cups old fashioned oats
  • 1.5 cups Oatly or any plant-based milk
  • 2 teaspoons baking powder
  • 2 tablespoons chia seeds
  • 2 eggs
  • 2 tablespoons cinnamon
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons honey or maple syrup

Toppings

  • Chobani nonfat Greek yogurt
  • Honey
  • Additional cinnamon
  • Fresh or Wyman fruit blueberries

Preparation

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Grease a pan, such as a heart-shaped pan or an 8x8 inch pan.

  3. Beat the egg.

  4. Add milk, oats, and all dry ingredients, then stir in blueberries.

  5. Bake for 30-40 minutes or until a cake tester comes out clean.

  6. Top with nonfat Greek yogurt, honey, more cinnamon, and fresh or Wyman fruit blueberries.
