Hearty Blueberry Baked Oatmeal Breakfast Dish
Ingredients
- 2 cups old fashioned oats
- 1.5 cups Oatly or any plant-based milk
- 2 teaspoons baking powder
- 2 tablespoons chia seeds
- 2 eggs
- 2 tablespoons cinnamon
- 1 cup fresh or frozen blueberries
- 2 tablespoons honey or maple syrup
Toppings
- Chobani nonfat Greek yogurt
- Honey
- Additional cinnamon
- Fresh or Wyman fruit blueberries
Preparation
Preheat oven to 400 degrees Fahrenheit.
Grease a pan, such as a heart-shaped pan or an 8x8 inch pan.
Beat the egg.
Add milk, oats, and all dry ingredients, then stir in blueberries.
Bake for 30-40 minutes or until a cake tester comes out clean.
Top with nonfat Greek yogurt, honey, more cinnamon, and fresh or Wyman fruit blueberries.
