Apricot-Banana Baked Oatmeal

Ingredients

  • 200g rolled oats
  • 2tbsp chia seeds
  • 3tbsp coconut shreds
  • 100ml protein powder (vanilla or salted caramel. **this is optional)
  • 3-4 fresh aprciots
  • 2 bananas
  • stevia (no idea how much)
  • 1 tsp cinnamon
  • 1/2tsp cardamom
  • 2-4tbsp peanut butter
  • pinch of vanilla
  • dried aprciots
  • 500ml liquid (ex. water/mylk)

Preparation

  1. Preheat oven to 220c. Grease a baking tray or several mini glass boxes

  2. In a large baking bowl add all the dry ingredients. Add 2tbsp peanut butter. 1 diced banana, the fresh apricots (diced) and some of the dried apricots (diced). Add 350ml hot liquid and mix. Allow to thicken for 5-10 minutes

  3. Then asd 150ml liquid, example mylk or vanilla yoghurt. Pour into the greased form(s). Top with sliced banana and peanut butter. Bake in the oven for 20-25 minutes. Once done, top with some dried apricots and eat as it is or with some mylk ??? p.s this would totally work with example strawberries and dried strawberries or even dried mango and fresh mango
