Blueberry Banana Peanut Butter Baked Oatmeal

Ingredients

  • 200g rolled oats
  • 350ml hot water
  • 100ml plant-based milk
  • 2 tbsp chia seeds
  • 1-2 bananas
  • 150g frozen blueberries
  • Peanut butter to taste
  • 50-60ml sweetener (stevia, sugar, or brown sugar)
  • Cinnamon and a pinch of salt

Preparation

  1. Preheat oven to 180°C.

  2. In a big bowl, add the rolled oats, chia seeds, sweetener, cinnamon, and a pinch of salt. Mix well. Optional: add banana slices and blueberries now or later.

  3. Pour hot water over the oats, mix, and let sit for 10 minutes.

  4. Grease a baking form or several mini forms with neutral oil or plant-based margarine.

  5. Add the plant-based milk to the oats, mix, and pour into the greased form. Top with blueberries, peanut butter, and banana slices.

  6. Bake in the oven for 25-30 minutes, covering with foil or parchment paper after half the time. Allow to cool slightly before eating.

  7. If using mini forms, baking time may be shorter.
