Banana Blueberry Oatmeal Bake with Streusel
Ingredients
- 2 bananas
- 2 cups plant milk
- 2 cups rolled oats
- Cinnamon (to taste)
- 2 tbsp chia seeds
- Frozen or fresh blueberries
- Streusel mix (leftover @eatsweetnature or DIY option)
- Tahini
Preparation
Preheat the oven to 350°F (175°C).
Mash the bananas in a mixing bowl.
Add the plant milk, rolled oats, cinnamon, and chia seeds to the mashed bananas. Stir well to combine all the ingredients.
Pour the mixture into a baking dish (an 8x8 Pyrex dish works well).
Layer the frozen or fresh blueberries on top of the oat mixture.
If using leftover streusel mix, combine it with tahini. Alternatively, prepare a streusel mix by mixing oat flour, sugar (coconut/date/other), cinnamon, and tahini to your taste. Sprinkle the streusel mixture evenly over the blueberries.
Place the baking dish in the preheated oven and bake for approximately 30 minutes or until the top is golden and the oats are cooked.
Once baked, remove from the oven and let it cool slightly before serving.
