Banana Blueberry Oat Bake with Peanut Butter Swirl
Ingredients
- 1 mashed banana
- 1/2 cup rolled oats
- 1/2 cup plant milk
- Cinnamon (to taste)
- 1 tbsp ground flax or other seed
- Frozen or fresh blueberries (or other fruit of choice)
- Peanut butter (optional)
Preparation
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine the mashed banana, rolled oats, plant milk, a generous amount of cinnamon, and the ground flax. Stir well to combine.
Add the frozen or fresh blueberries (or your chosen fruit) to the mixture and stir again.
Pour the mixture into a baking dish, spreading it evenly.
If desired, gently swirl peanut butter into the batter for added flavor. Use a knife to create a marbled effect.
Place the baking dish in the preheated oven and bake for approximately 25-30 minutes, or until the bake is set and the top is golden brown.
Once baked, remove from the oven and allow the banana blueberry oat bake to cool. It will set up as it cools.
Cut into slices and serve as a delicious and nutritious breakfast or snack.
