Zucchini Oat Bake
Ingredients
- 1 banana
- 1/2 cup rolled oats
- 2 tbsp steel cut oats (optional but recommended)
- cinnamon
- 1 tbsp ground flax (optional)
- 1/2 cup plant milk
Preparation
Mash 1 banana
Stir to combine, then add desired amount of grated zucchini (I didn’t squeeze the shreds before adding)
Stir again, pour into baking dish (I use a 2-cup glass bowl) and bake at 350F for 25-30 mins
I haven’t been adding any baking powder to the oat bakes recently bc I realized I like the texture even better without it
