Quick Banana Oat Breakfast Cookies

Ingredients

  • 1 banana
  • 1/2 cup rolled oats
  • 2 tbsp steel cut oats
  • lots of cinnamon
  • 1 tbsp ground flax (or another seed)

Preparation

  1. Mash 1 banana.

  2. Add 1/2 cup rolled oats, 2 tbsp steel cut oats, lots of cinnamon, and 1 tbsp ground flax (or another seed). Stir to combine.

  3. Form into cookies on a parchment-lined baking tray.

  4. Bake for 7-9 minutes at 350°F.

  5. Let cool slightly before eating.

Serving suggestion

  1. Pair with frozen mixed berries and cranberries.
