Carrot Cookies with Banana and Oats

Ingredients

  • 1 banana
  • 1/2 cup rolled oats
  • 1 tbsp steel cut oats
  • lots of cinnamon
  • 1 tbsp ground flax (or other seed)
  • shredded carrot (e.g., 1 big carrot)

Preparation

  1. Mash 1 banana.

  2. Add 1/2 cup rolled oats, 1 tbsp steel cut oats, lots of cinnamon, and 1 tbsp ground flax (or other seed), then stir to combine.

  3. Add desired amount of shredded carrot and stir again.

  4. Form into cookies on a parchment-lined baking tray.

  5. Bake at 350F for 10 minutes.

  6. Allow to cool slightly; they will firm up as they cool.

Tips

  1. You may not taste the carrot in the cookies.
