Blueberry Oat Bake with Sliced Bananas

Ingredients

  • 1 banana
  • 1/2 cup rolled oats
  • 2 tbsp steel cut oats (optional)
  • lots of cinnamon
  • 1 tbsp ground flax (or other seed)
  • and 1/2 cup plant milk

Preparation

  1. Mash 1 banana

  2. Add 1/2 cup rolled oats, 2 tbsp steel cut oats (optional), lots of cinnamon, 1 tbsp ground flax (or other seed), and 1/2 cup plant milk

  3. Stir to combine, then add desired amount of blueberries (fresh or frozen - I used fresh here?)

  4. Stir gently, pour into baking dish (I use a 2 cup Pyrex), and bake at 350F for 25 min
