Zucchini Breakfast Cookies

Ingredients

  • 1 banana
  • 1/2 cup rolled oats
  • 2 tbsp steel cut oats
  • lots of cinnamon
  • 1 tbsp ground flax
  • zucchini

Preparation

  1. Mash 1 banana

  2. Add 1/2 cup rolled oats, 2 tbsp steel cut oats, lots of cinnamon, 1 tbsp ground flax (or another seed)

  3. Stir to combine, then grate in desired amount of zucchini (I used half of a large one)

  4. Stir again, then form into cookies on a parchment-lined baking tray

  5. Bake for 8-10 minutes at 350F

  6. They may look underdone but they will firm up as they cool
