Zucchini Breakfast Cookies
Ingredients
- 1 banana
- 1/2 cup rolled oats
- 2 tbsp steel cut oats
- lots of cinnamon
- 1 tbsp ground flax
- zucchini
Preparation
Mash 1 banana
Add 1/2 cup rolled oats, 2 tbsp steel cut oats, lots of cinnamon, 1 tbsp ground flax (or another seed)
Stir to combine, then grate in desired amount of zucchini (I used half of a large one)
Stir again, then form into cookies on a parchment-lined baking tray
Bake for 8-10 minutes at 350F
They may look underdone but they will firm up as they cool
