Oats and Sweet Potatoes

Ingredients

  • 350g sweet potato (1 medium sp) - boiled or baked
  • 200g rolled oats
  • 100g sugar or stevia
  • pinch of salt
  • 50ml oil or margarine
  • 350ml hot water
  • peanut butter

Preparation

  1. Boil or bake the sweet potato until soft. Allow to cool completely. Then mash

  2. Preheat oven to 180C and grease a baking form or several small glass jars

  3. In a baking bowl add the rolled oats, stevia, spices, mashed sweet potato. Mix

  4. Add the oil or melted margarine, 1-2tbsp peanut butter or other nut butter

  5. Add the hot water and mix. Allow to sit for 10 minutes

  6. Pour the mix into the greased baking form. Add some peanut butter on top. Optional some banana, walnuts and/or coconut shreds

  7. Bake in the oven for about 30-35 minutes, or until fully baked - but with a slight crunch on the outside
