Double Chocolate Berry Baked Oatmeal

Ingredients

  • 2 cups old fashioned oats
  • 1.5 cups oat milk or any plant-based milk
  • 2 teaspoons baking powder
  • 2 tablespoons chia seeds (optional)
  • 2 eggs
  • 2 tablespoons cocoa powder
  • 1/4 cup chocolate chips
  • 1/2 cup mixed berries, fresh or frozen
  • 2 tablespoons honey or maple syrup

Preparation

  1. Preheat oven to 400 degrees Fahrenheit and grease a baking pan, such as an 8x8 inch pan or a heart-shaped pan.

  2. Beat the egg.

  3. Add the milk, oats, and all dry ingredients to the egg and mix well.

  4. Stir in the berries and chocolate chips.

  5. Bake for 30 to 40 minutes or until a cake tester comes out clean.

  6. Top with nonfat Greek yogurt, honey, cinnamon, sunbutter, and fresh blueberries if desired.
