Chocolate Infused Banana Bread with Almond Milk
Ingredients
- 130g (1 cup) spelt flour
- 95g (1/2 cup) coconut sugar
- 75g (3/4 cup) cocoa powder
- 3g (1 tsp) baking powder
- 3g (1/4 tsp) salt
- 90g (1/2 cup) chocolate chips
- 2 eggs
- 2 ripe bananas (plus 1/2 for topping)
- 125g (1/2 cup) almond milk
- 70g (1/3 cup) coconut oil, melted
Preparation
Preheat oven to 175°C
Sift together flour, baking powder, cocoa powder, and salt
In a separate bowl, whisk eggs, coconut sugar, and coconut oil until fluffy
Add the sifted dry ingredients to the mixture
Add the mashed banana and almond milk
Add all but 1 tablespoon of the chocolate chips
Top with half a banana and the reserved tablespoon of chocolate chips
Bake for 30-45 minutes or until a toothpick inserted comes out clean
Optionally top with almond butter for extra flavor
