Chocolate Infused Banana Bread with Almond Milk

Ingredients

  • 130g (1 cup) spelt flour
  • 95g (1/2 cup) coconut sugar
  • 75g (3/4 cup) cocoa powder
  • 3g (1 tsp) baking powder
  • 3g (1/4 tsp) salt
  • 90g (1/2 cup) chocolate chips
  • 2 eggs
  • 2 ripe bananas (plus 1/2 for topping)
  • 125g (1/2 cup) almond milk
  • 70g (1/3 cup) coconut oil, melted

Preparation

  1. Preheat oven to 175°C

  2. Sift together flour, baking powder, cocoa powder, and salt

  3. In a separate bowl, whisk eggs, coconut sugar, and coconut oil until fluffy

  4. Add the sifted dry ingredients to the mixture

  5. Add the mashed banana and almond milk

  6. Add all but 1 tablespoon of the chocolate chips

  7. Top with half a banana and the reserved tablespoon of chocolate chips

  8. Bake for 30-45 minutes or until a toothpick inserted comes out clean

  9. Optionally top with almond butter for extra flavor
