Mocha Baked Oatmeal Breakfast Dish
Ingredients
- 2 cups old-fashioned oats
- 1 cup plant-based milk
- 1/2 cup brewed coffee
- 2 teaspoons baking powder
- 2 tablespoons chia seeds (optional)
- 2 eggs
- 2 tablespoons cocoa powder
- 1/4 cup mocha chips
- 1 package instant coffee
Optional add-ins

- dates
- chocolate
Preparation
Preheat oven to 400 degrees Fahrenheit and grease a pan.
Beat the eggs, then add milk, oats, and all dry ingredients.
Stir in coconut, dates, and chocolate.
Bake for 30 to 40 minutes or until a cake tester comes out clean.
Serving suggestions
Top with nonfat Greek yogurt, honey, cinnamon, mini chocolate chips, and sunbutter.
