Mocha Baked Oatmeal Breakfast Dish

Ingredients

  • 2 cups old-fashioned oats
  • 1 cup plant-based milk
  • 1/2 cup brewed coffee
  • 2 teaspoons baking powder
  • 2 tablespoons chia seeds (optional)
  • 2 eggs
  • 2 tablespoons cocoa powder
  • 1/4 cup mocha chips
  • 1 package instant coffee

Optional add-ins

  • coconut
  • dates
  • chocolate

Preparation

  1. Preheat oven to 400 degrees Fahrenheit and grease a pan.

  2. Beat the eggs, then add milk, oats, and all dry ingredients.

  3. Stir in coconut, dates, and chocolate.

  4. Bake for 30 to 40 minutes or until a cake tester comes out clean.

Serving suggestions

  1. Top with nonfat Greek yogurt, honey, cinnamon, mini chocolate chips, and sunbutter.
