Triple Chocolate Brownie Baked Oats
Ingredients
- 2 ripe bananas
- 2 tbsp chia seeds
- 360ml plant-based milk
- 2 tbsp maple syrup
- 200g oats
- 25g cacao powder
- 1 tsp baking powder
- A pinch of salt
- 20g + 10g cacao nibs
- 20g + 10g chocolate, chopped
For serving
- coconut yoghurt
- fruit
- melted chocolate
Preparation
Preheat the oven to 160Fan/180*C and lightly grease an oven-proof dish approximately 20cm x 16cm or equivalent
Add 1 banana to a large mixing bowl and mash well
Chop the other banana into small pieces
To the mashed banana, stir in the chia seeds, plant-based milk and maple syrup
Now stir in the oats, cacao powder, baking powder and a pinch of salt
Fold in the chopped banana and 20g each cacao nibs and chocolate chips
Pour into the greased dish, smooth over the top and sprinkle over the remaining 10g each cacao nibs and chocolate chips
Bake for 30 minutes until firm to touch
Notes
Allow to cool slightly before slicing into pieces and serve warm or cold with berries and yoghurt
Once cool, leftovers will keep in the fridge in a sealed container for 2-3 days
