Cherry Almond Baked Oats

Ingredients

  • 2 cups jumbo oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs or flax eggs
  • 2 tsp vanilla
  • 2 cups almond milk
  • 1/2 cup maple syrup
  • 1 tsp almond extract
  • 2 tbsp olive oil
  • 2 cups pitted cherries - fresh or frozen
  • 1 tbsp flaked almonds
  • extra maple syrup to serve

Preparation

  1. Preheat the oven to 180C

  2. In a large bowl mix the oats, baking powder and salt. Set aside

  3. In another bowl whisk together the eggs, vanilla, almond milk, maple syrup, almond extract and olive oil

  4. Pour the liquid mix into the oat mix and stir together

  5. Pour into your baking dish

  6. Sprinkle the frozen cherries into the batter as evenly as you can and gently push some of them down

  7. Sprinkle with the flaked almonds

  8. Bake for around 45 to 50 minutes till the top is golden brown

  9. Let it cool a little and serve

Tips

  1. Use fresh or frozen cherries for this recipe

  2. For a stronger almond flavor, use 1.5 teaspoons of almond extract

  3. Serve with additional maple syrup if desired
