Sheet Pan Pancakes for Breakfast
Ingredients
- 2 cups plain flour
- 2 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1 1/4 cup milk
- 3 eggs
- 1 tsp vanilla
- 2 tbsp sugar
- 3 tbsp olive oil
- 1 tsp icing sugar - optional
Toppings
- sliced banana
- sliced strawberries
- flaked almonds
Serving
- Maple syrup or honey to serve
Preparation
Preheat the oven to 180C and line a 9 x 12 inch baking tray with baking paper.
Put a fine sieve over a large bowl and sieve in the flour, baking powder and cinnamon.
In another bowl whisk together the milk, eggs, vanilla, sugar and olive oil.
Pour the wet ingredients into the dry and whisk till just combined. Don’t over whisk. Pour the mix into the baking tray.
Arrange the toppings on top
If using, sieve the icing sugar on top.
Bake for around 15 minutes or till an inserted knife comes out clean.
Optional step: put it under a hot grill for three minutes to brown the top and create a thin crust.
Notes
Without the grilling step, the pancakes will be softer, which may be preferred.
