Jammy Blueberry Breakfast Cake
Ingredients
Base layer
- 2 cups blueberries
- 1/3 cup jam of your choice
Top layer
- 1 1/2 cups (225g) plain flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs, beaten
- 1 tbsp olive oil
- 1 1/4 cups (300ml) oat milk
- 2 tsp vanilla
- 1 tbsp maple syrup
Preparation
Preheat the oven to 180°C.
Put the blueberries and jam in an ovenproof dish and mix to combine.
Bake for 10 minutes.
While the berries are baking, prepare the top layer.
In a large bowl, whisk together the eggs, olive oil, oat milk, vanilla, and maple syrup.
Place a fine sieve over the bowl and sieve in the flour, salt, and baking powder.
Whisk until just combined.
When the berries have softened, gently pour the batter over the top.
Return to the oven and bake for 25 to 30 minutes, depending on the depth of your dish. To test if it's ready, insert a knife into the middle.
Serve with extra maple syrup.
