Zesty Lemon Blueberry Pancakes

Ingredients

  • 100g whole-wheat flour (also works with normal flour)
  • 1 tsp baking powder
  • Pinch of salt
  • 175ml oat milk
  • juice and zest of half a lemon
  • 2 tbsp maple syrup
  • 1 tbsp vegetable oil
  • 1-2 handfuls blueberries

Preparation

  1. Mix the flour, baking powder and salt together in a bowl.

  2. Mix in the oat milk, lemon juice, lemon zest, maple syrup and vegetable oil until well combined.

  3. Finally mix in the blueberries.

  4. Cook the pancakes on a pan with a little oil and flip when bubbles appear.

Tips

  1. Get creative with toppings; options include bananas, blueberries, peanut butter, and soy yoghurt.
