Zesty Lemon Blueberry Pancakes
Ingredients
- 100g whole-wheat flour (also works with normal flour)
- 1 tsp baking powder
- Pinch of salt
- 175ml oat milk
- juice and zest of half a lemon
- 2 tbsp maple syrup
- 1 tbsp vegetable oil
- 1-2 handfuls blueberries
Preparation
Mix the flour, baking powder and salt together in a bowl.
Mix in the oat milk, lemon juice, lemon zest, maple syrup and vegetable oil until well combined.
Finally mix in the blueberries.
Cook the pancakes on a pan with a little oil and flip when bubbles appear.
Tips
Get creative with toppings; options include bananas, blueberries, peanut butter, and soy yoghurt.
