Fluffy Blueberry Poppy Seed Pancakes
Ingredients
- 100g flour
- 20g coconut flour
- 1 tablespoon baking powder
- 2 tablespoons coconut blossom sugar
- 1 tablespoon poppy seeds
- 100ml soy milk
- 100-150ml sparkling water
- blueberries
Preparation
Mix together the flour, coconut flour, baking powder, coconut blossom sugar, and poppy seeds
Mix the soy milk with approximately 100-150ml of sparkling water, adjusting for consistency
Combine the wet and dry mixtures to form a batter
Let the batter rest for 10 minutes
Fold in the blueberries
Cook the pancakes on medium heat until golden brown on both sides
