Banana Bread Pancakes with Chocolate, Almond Butter, and Blueberries
Ingredients
- 1 ripe banana, mashed
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
- blueberries
- almond butter
- dark chocolate blocks
Preparation
Mash the banana with a fork, beat the egg, and mix all of the ingredients except for the garnishes.
Heat a non-stick pan and, using a spoon, pour the batter to form small pancakes, optionally adding a tiny amount of coconut oil.
Cook each side for 1 minute until golden-brown.
After making a stack of pancakes, add the blueberries and chocolate blocks.
Drizzle with almond butter and enjoy.
