Banana Bread Pancakes with Chocolate, Almond Butter, and Blueberries

Ingredients

  • 1 ripe banana, mashed
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder
  • blueberries
  • almond butter
  • dark chocolate blocks

Preparation

  1. Mash the banana with a fork, beat the egg, and mix all of the ingredients except for the garnishes.

  2. Heat a non-stick pan and, using a spoon, pour the batter to form small pancakes, optionally adding a tiny amount of coconut oil.

  3. Cook each side for 1 minute until golden-brown.

  4. After making a stack of pancakes, add the blueberries and chocolate blocks.

  5. Drizzle with almond butter and enjoy.
