Banana Bread Pancakes with Chocolate, Peanut Butter & Bananas
Ingredients
- 1 ripe banana (mashed)
- 1 egg/1 flax egg
- 2 tablespoons flour
- Pinch of baking powder
- Banana slices
- Dark chocolate blocks
- Peanut butter
- Cacao nibs
Preparation
Mash the ripe banana with a fork.
Beat the egg (or flax egg) in a bowl.
Add the mashed banana to the bowl with the egg.
Mix in the flour and a pinch of baking powder until the batter is well combined.
Heat a non-stick pan over medium heat.
If desired, add a tiny amount of coconut oil to the pan.
Using a spoon, pour the pancake batter onto the pan to form small pancakes.
Cook each side for about 1 minute, until they turn golden-brown.
Stack the pancakes on a plate.
Toppings
Arrange banana slices on top of the pancake stack.
Place dark chocolate blocks on the pancakes.
Sprinkle cacao nibs over the stack.
Drizzle peanut butter over the pancakes.
