Banana Bread Pancakes with Chocolate, Peanut Butter & Bananas

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg/1 flax egg
  • 2 tablespoons flour
  • Pinch of baking powder
  • Banana slices
  • Dark chocolate blocks
  • Peanut butter
  • Cacao nibs

Preparation

  1. Mash the ripe banana with a fork.

  2. Beat the egg (or flax egg) in a bowl.

  3. Add the mashed banana to the bowl with the egg.

  4. Mix in the flour and a pinch of baking powder until the batter is well combined.

  5. Heat a non-stick pan over medium heat.

  6. If desired, add a tiny amount of coconut oil to the pan.

  7. Using a spoon, pour the pancake batter onto the pan to form small pancakes.

  8. Cook each side for about 1 minute, until they turn golden-brown.

  9. Stack the pancakes on a plate.

Toppings

  1. Arrange banana slices on top of the pancake stack.

  2. Place dark chocolate blocks on the pancakes.

  3. Sprinkle cacao nibs over the stack.

  4. Drizzle peanut butter over the pancakes.
