Chocolate Swirl Banana Bread Pancakes
Ingredients
- 1 ripe banana
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
- dark chocolate
- shredded coconut
Toppings
- banana slices
- more dark chocolate
Preparation
Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all ingredients except for the garnishes.
Melt some chocolate in the microwave.
Heat a non-stick pan and optionally add a tiny amount of coconut oil for frying.
Using a spoon, pour the batter to form little pancakes.
Pour some chocolate on top of the batter and make a swirl.
Cook each side for 1 minute until golden-brown.
After making the stack of pancakes, add banana slices, shredded coconut, and additional chocolate on top.
