Chocolate Swirl Banana Bread Pancakes

Ingredients

  • 1 ripe banana
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder
  • dark chocolate
  • shredded coconut

Toppings

  • banana slices
  • more dark chocolate

Preparation

  1. Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all ingredients except for the garnishes.

  2. Melt some chocolate in the microwave.

  3. Heat a non-stick pan and optionally add a tiny amount of coconut oil for frying.

  4. Using a spoon, pour the batter to form little pancakes.

  5. Pour some chocolate on top of the batter and make a swirl.

  6. Cook each side for 1 minute until golden-brown.

  7. After making the stack of pancakes, add banana slices, shredded coconut, and additional chocolate on top.
