Mini Banana Pancakes with Nut Butter and Yogurt

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder

Garnishes

  • berries
  • nut butter
  • yoghurt

Preparation

  1. Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all of the ingredients except for the garnishes.

  2. Heat a non-stick pan and optionally add a tiny amount of coconut oil if desired.

  3. Pour the batter using a teaspoon to form mini pancakes.

  4. Cook each side until golden-brown.

  5. After making the mini pancakes, add blueberries and yoghurt.

  6. Drizzle nut butter over everything.

  1. This recipe is perfect for a fun and healthy breakfast, and it can be made vegan by using a flax egg.
