Mini Banana Pancakes with Nut Butter and Yogurt
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
Garnishes
- berries
- nut butter
- yoghurt
Preparation
Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all of the ingredients except for the garnishes.
Heat a non-stick pan and optionally add a tiny amount of coconut oil if desired.
Pour the batter using a teaspoon to form mini pancakes.
Cook each side until golden-brown.
After making the mini pancakes, add blueberries and yoghurt.
Drizzle nut butter over everything.

This recipe is perfect for a fun and healthy breakfast, and it can be made vegan by using a flax egg.
