Chocolate Chip Banana Bread Pancakes
Ingredients
- 1 ripe banana
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
- chocolate chips, chocolate chunks, or any kind of chocolate
Toppings
- banana slices
- more dark chocolate
Preparation
Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all the ingredients including a small handful of chocolate, except for the garnishes.
Heat a non-stick pan and pour the batter using a spoon to form small pancakes; you may add a small amount of coconut oil if desired.
Cook each side for 1 minute until golden-brown.
Stack the pancakes and add the banana slices and additional chocolate on top.
