Banana Bread Pancakes with Chocolate and Strawberries

Ingredients

  • 1 ripe banana, mashed
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder

Garnishes

  • strawberries
  • dark chocolate blocks

Preparation

  1. Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all ingredients except the garnishes.

  2. Heat a non-stick pan and pour the batter using a spoon to form small pancakes, adding a small amount of coconut oil if desired.

  3. Cook each side for 1 minute until golden-brown.

  4. Stack the pancakes, slice them in half, and add strawberries.

  5. Break the chocolate into small pieces and melt it in the microwave, heating in intervals and stirring to avoid burning.

  6. Optionally, add a little milk or coconut oil to the chocolate for smoothness, then drizzle it over the pancakes.

Notes

  1. This makes a lovely breakfast and can be prepared quickly.
