Mini Banana Pancakes with Nut Butter and Berries

Ingredients

  • 1 ripe banana, mashed
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder

Garnishes

  • berries
  • nut butter
  • yoghurt

Preparation

  1. Mash the banana with a fork.

  2. Beat the egg.

  3. Mix all ingredients except the garnishes to prepare the pancake batter.

  4. Heat a non-stick pan.

  5. Pour the batter using a teaspoon to form mini pancakes and add a small amount of coconut oil if desired.

  6. Cook each side until golden-brown.

  7. Add blueberries and yoghurt to the pancakes.

  8. Drizzle nut butter over everything.
