Mini Banana Pancakes with Nut Butter and Berries
Ingredients
- 1 ripe banana, mashed
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
Garnishes
- berries
- nut butter
- yoghurt
Preparation
Mash the banana with a fork.
Beat the egg.
Mix all ingredients except the garnishes to prepare the pancake batter.
Heat a non-stick pan.
Pour the batter using a teaspoon to form mini pancakes and add a small amount of coconut oil if desired.
Cook each side until golden-brown.
Add blueberries and yoghurt to the pancakes.
Drizzle nut butter over everything.
