Chocolate Clementine Banana Bread Pancakes
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
- cacao powder
Toppings
- clementines
- dark chocolate
Preparation
Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all ingredients except the garnishes.
Heat a non-stick pan and pour the batter using a spoon to form small pancakes. You may add a small amount of coconut oil if desired.
Cook each side for 1 minute until done.
Stack the pancakes and top with clementines and additional chocolate.
