Chocolate Clementine Banana Bread Pancakes

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder
  • cacao powder

Toppings

  • clementines
  • dark chocolate

Preparation

  1. Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all ingredients except the garnishes.

  2. Heat a non-stick pan and pour the batter using a spoon to form small pancakes. You may add a small amount of coconut oil if desired.

  3. Cook each side for 1 minute until done.

  4. Stack the pancakes and top with clementines and additional chocolate.
