Chocolate Banana Pancakes with Fruits
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
- 1 tablespoon cacao powder
Garnishes
- seasonal fruits (e.g., figs and grapes)
- honey or maple syrup for drizzling
Preparation
Mash the banana with a fork, beat the egg, and mix all of the ingredients except for the garnishes to prepare the batter
Heat a non-stick pan and pour the batter using a spoon to form small pancakes, adding a small amount of coconut oil if desired
Cook each side for 1 minute until golden-brown
Stack the pancakes and add the fruits
Drizzle honey or syrup over the pancakes
