Chocolate Banana Pancakes with Fruits

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder
  • 1 tablespoon cacao powder

Garnishes

  • seasonal fruits (e.g., figs and grapes)
  • honey or maple syrup for drizzling

Preparation

  1. Mash the banana with a fork, beat the egg, and mix all of the ingredients except for the garnishes to prepare the batter

  2. Heat a non-stick pan and pour the batter using a spoon to form small pancakes, adding a small amount of coconut oil if desired

  3. Cook each side for 1 minute until golden-brown

  4. Stack the pancakes and add the fruits

  5. Drizzle honey or syrup over the pancakes
