Pumpkin Pancakes with Chocolate and Yoghurt
Ingredients
- 130 g pumpkin puree
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
Toppings
- some yoghurt
- dark chocolate
Preparation
First, prepare the pancake batter by mixing the pumpkin puree with the egg, flour, and baking powder. If using fresh pumpkin, bake it in the oven and mash it with a fork.
If the mixture is too thick, add 1 tablespoon of water or milk. If it is too runny, add a little more flour.
Heat a non-stick pan and pour the batter using a spoon to form small pancakes. You can add a small amount of coconut oil if desired.
Cook each side for 1 minute until golden-brown.
After making the stack of pancakes, add the yoghurt and chocolate on top.
