Chocolate Chip Banana Bread Pancakes
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
- chocolate chips, chocolate chunks or any kind of chocolate
Toppings
- banana slices
- more dark chocolate
Preparation
Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all of the ingredients including a small handful of chocolate, except for the garnishes.
Heat a non-stick pan and pour the batter using a spoon to form little pancakes, and you can add a tiny amount of coconut oil if you want to fry them.
Cook each side for 1 minute until they turn golden-brown.
After making the stack of pancakes, add the banana slices and the additional chocolate on top.
