Banana Bread Pancakes with Chocolate & Strawberries
Ingredients
- 1 ripe banana (mashed)
- 1 egg/1 flax egg
- 2 tablespoons flour
- Pinch of baking powder
- Strawberries
- Dark chocolate pieces
Preparation
Prepare the pancake batter by beating the egg and mashing the banana with a fork.
Mix in the flour and a pinch of baking powder, creating a smooth batter.
Heat a non-stick pan and spoon the batter onto it, forming small pancakes.
Optionally, add a tiny amount of coconut oil to the pan before frying.
Sprinkle chocolate pieces on top of each pancake.
Cook until both sides turn golden-brown.
Stack the pancakes and slice them in half.
Add sliced strawberries on top.
