Banana Bread Pancakes with Chocolate & Strawberries

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg/1 flax egg
  • 2 tablespoons flour
  • Pinch of baking powder
  • Strawberries
  • Dark chocolate pieces

Preparation

  1. Prepare the pancake batter by beating the egg and mashing the banana with a fork.

  2. Mix in the flour and a pinch of baking powder, creating a smooth batter.

  3. Heat a non-stick pan and spoon the batter onto it, forming small pancakes.

  4. Optionally, add a tiny amount of coconut oil to the pan before frying.

  5. Sprinkle chocolate pieces on top of each pancake.

  6. Cook until both sides turn golden-brown.

  7. Stack the pancakes and slice them in half.

  8. Add sliced strawberries on top.
