Banana Bread Pancakes with Chocolate and Fruits

Ingredients

  • 1 ripe banana, mashed
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder

Toppings

  • various fruits
  • chocolate
  • coconut

Preparation

  1. Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all ingredients except the garnishes.

  2. Heat a non-stick pan and pour the batter using a spoon to form small pancakes; add a tiny amount of coconut oil if desired.

  3. Cook each side for 1 minute until golden-brown.

  4. Stack the pancakes and add the fruits, chocolate, and coconut shreds.
