Banana Bread Pancakes with Chocolate and Fruits
Ingredients
- 1 ripe banana, mashed
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
Toppings
- various fruits
- chocolate
- coconut
Preparation
Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all ingredients except the garnishes.
Heat a non-stick pan and pour the batter using a spoon to form small pancakes; add a tiny amount of coconut oil if desired.
Cook each side for 1 minute until golden-brown.
Stack the pancakes and add the fruits, chocolate, and coconut shreds.
