Vegan Pancakes with Fruit Compote and Chocolate
Ingredients
- 1 cup flour
- 2 Tbsp coconut sugar
- 1 Tbsp baking powder
- 1 cup nut milk
- 1 Tbsp apple cider vinegar
- 1 tsp vanilla
- 2 melon ball scoops of fresh pink dragon fruit
Compote and toppings
- Mango
- Strawberry
- Blueberries
- Figs
- Blackberries
- Raspberries
- Dark chocolate
Preparation
Combine the dry ingredients and set aside.
In a separate bowl, combine the wet ingredients and mix with a hand blender.
Add the wet mixture to the dry ingredients and mix well.
Cook the batter on a hot griddle to make pancakes
Make a compote by cooking mango, strawberry, and blueberries together until softened
Layer the compote between each pancake and on top.
Add figs, blackberries, and raspberries as additional toppings.
Drizzle with dark chocolate.
