Delicious Autumn Harvest Pancakes

Ingredients

  • 1 cup flour
  • 2 Tbsp coconut sugar
  • 1 Tbls baking powder
  • 1 tsp pure elderberry powder @suncorefoods “garnet elderberry”
  • 1 cup nut milk
  • 1 Tbl Apple cider vinegar
  • 1 tsp vanilla
  • 1 apple, thinly sliced

Preparation

  1. Combine dry ingredients and set aside.

  2. In a separate bowl, combine nut milk, apple cider vinegar, and vanilla.

  3. Combine and add to dry ingredients, then mix until ready for pancake making.

  4. If you want fluffy pancakes, once mixed don’t touch, let rest and no more stirring, only scoop what you need for each pancake.

  5. When ready to cook, place vegan butter in pan and heat to medium, add sliced apple and allow to soften slightly.

  6. Using a large scoop, place batter scoops over the apple slices, cook until bubbles appear and no longer looks wet, then flip.

  7. Voila, delicious Autumn Harvest Pancakes are ready to serve.
