Rainy Day Pancakes

Ingredients

  • 1 cup flour (i used oat flour)
  • 1 cup nut milk
  • 1 tbs baking powder
  • 1 tbs coconut sugar
  • 1/4 tsp vanilla extract

Preparation

  1. Mix together the flour, sugar and baking powder

  2. Add in milk + vanilla extract

  3. Let the batter rest for 10 mins to let the baking powder work it's magic ✨ heat up a skillet with a neutral oil and pour 1/4 cup batter

  4. Cool for 2 mins or until the top is all bubbly, then flip and cook for another minute

  5. Repeat until you have used up all the batter

  6. Top with your favorite toppings! I did sliced bananas, fresh strawberries ?+ bluebs, lots of chocolate almond butter, and coconut ? chips

  7. Enjoy
